I need help figuring something out!?

I work for a small mortgage company right now. For the last couple of years the owner has been screwing us over w/ our pay and other things. Things like he takes a big chunk of our check because hes not making enough money for him to pay us and when he does changes like this we dont find out till we see our checks. We get payed on salary and commision so whenever you miss a day you get payed no matter what. I went on a vacation for 2 weeks and I was expecting a 2 week pay but I only got a 1 week pay. He just didnt want to pay me. Hes never had us sign anything that states that if he doesnt get payed enough he has the right to change our pay. A while ago he promised that the top producer for each department would get a all expensed paid trip for two and till this day he hasnt come through. All he does is take it day by day. He changes things and it affects our checks as the days go for his benefit.
So Im wondering if we would have a case if we decide to take him to court?
